Learn how to cook Lebanese Palestinian Comfort Food with Hisham Assaad.

Lebanese and Palestinian cuisines are celebrated for their warmth, generosity, and deep sense of hospitality. In this class, you will explore classic comfort dishes from the region with Hisham Assaad, a Beirut-based Lebanese-Palestinian cookbook author. Sharing food is central to the culture, and cooking together is an important way of strengthening connections.

Together, we will prepare kibbeh, the region’s iconic burghul (bulgur)-based dish, made  as a tray bake and with an introduction to its many traditional variations. You will also learn to make shish barak, delicate meat-filled dumplings that are baked and gently finished in warm yogurt sauce. Particular focus will be given to mastering the technique for achieving a silky, stable yogurt sauce without splitting. We will also make the iconic Tabboule salad the proper way. 

This class is suitable for anyone interested in Lebanese and Palestinian cooking, regardless of prior experience
